2. Key Features for Nuggets

  • Double Mesh Belt: Nuggets are light and tend to float. A double-belt system keeps them submerged in the oil for perfectly even browning on both sides.4
  • Crumb Management: Battered nuggets lose crumbs. These fryers have a longitudinal scraper at the bottom that constantly pushes fallen crumbs out of the heat zone to prevent "black spots" and keep the oil fresh.5
  • Variable Speed (VFD): Crucial for nuggets.6 Different recipes require different "dwell times" (usually 3–5 minutes) in the oil.
  • Lifting System: For the 500+ kg/hr models, the entire conveyor belt and hood lift up electrically for easy cleaning (CIP - Clean In Place).7

After frying, nuggets must pass through a Vibratory De-Oiler or an Air Cooling Tunnel. Without this, the breading will absorb excess oil and become soggy during packaging.
