Namkeen Continuous Frying System Multy Purpuse
Multipurpose
Continuous Frying System for
Namkeen is designed to handle a wide variety of snacks—ranging from light,
floating items like Sev and Boondi to heavy, non-floating items
like Chana Dal and Peanuts—all in a single machine.
The
"multipurpose" capability comes from the Variable Frequency Drive
(VFD), which allows you to adjust the frying time and belt speed precisely
for each unique product.

2. What makes it
"Multipurpose"?
To fry different items
successfully, the system uses three critical design features:
- Dual-Belt Conveyor System:
- Submerger Belt: Essential for floating items (like Gathiya,
Papdi, and Fryums) to keep them under the oil for even cooking.
- Take-out Belt: A fine mesh belt that ensures even the
smallest items (like Nylon Sev or Boondi) are collected and
removed without breakage.
- Adjustable Flow Control: Multiple oil inlets allow the operator to
control the "push" of the oil. For light snacks, you need a
gentle flow; for heavy pulses like Moong Dal, you need higher
circulation to keep them moving.
- VFD Speed Control: The "Variable Frequency Drive"
allows you to change the belt speed via a touchscreen. You can fry Potato
Chips in 3 minutes and then switch to Moong Dal which may
require 6 minutes, just by changing a setting.
3. Integrated
Components
- Gear Motor Hood Lifting: The entire top conveyor hood can be
lifted automatically using air cylinders. This is crucial for multipurpose
use because you need to clean the machine thoroughly when switching
between different products (e.g., from spicy Bhujia to plain Boondi).
- Continuous Oil Filtration: A rotating drum or belt filter removes
"fines" (broken pieces) instantly. This is vital for Namkeen
because Besan (gram flour) leaves a lot of residue that can burn
and spoil the oil.
- Oil Cooling & Storage Tank: Includes a "Day Tank" that can
hold all the oil from the system. It often features a cooling jacket to
prevent the oil from oxidizing when the machine is shut down.
- Automatic Oil Topping: A sensor detects when oil levels drop
(due to absorption by the snack) and automatically pumps fresh oil from
the storage tank into the fryer.

5. Benefits for the
Manufacturer
- Minimal Oil Degradation: The high Oil Turnover Ratio (OTR)
means you are always adding fresh oil, keeping the "Acid Value"
low.
- Labor Efficiency: A multipurpose continuous line typically
requires only 2 operators, compared to 6–8 for a batch frying setup of the
same capacity.
- Fuel Savings: Indirect heating via a heat exchanger is
roughly 30% more efficient than direct-fired pans.
