3. Critical Features for Corn Curls
- Thermic
Fluid Heat Exchanger: For "big size" lines, the oil is heated in
a separate coil unit and circulated into the fryer.7 This
prevents direct flame contact with the oil, which keeps the oil fresh
(lowers peroxide value) for much longer.
- Pneumatic
Hood Lift: At the press of a button, the entire top conveyor and hood lift
up. This is essential for cleaning the cornmeal residue that can
accumulate at the bottom of the tank.
- Continuous
Fines Filter: Corn curls shed many tiny particles (fines).8 An
automatic drum or bucket filter removes these continuously so they don't
burn and turn the oil black.
- De-Oiling
Belt: Immediately after frying, a vibratory or mesh belt removes surface
oil to ensure the curls "hold" the seasoning properly without
feeling greasy
