Moton Nugget Fryer Machine
Moton-style Nugget Fryer (often referring to heavy-duty, industrial
continuous fryers used in "Moton" or large-scale food processing
setups) is a high-capacity machine designed to handle breaded, battered, or
tempura-coated nuggets.
Unlike standard snack fryers, these machines use a Double Mesh Belt
system to submerge the nuggets completely in oil, ensuring they don't float and
cook unevenly.
1. Key Technical Features
- Double
Layer Conveyor: The product is sandwiched between an upper and lower belt.
This prevents nuggets from floating (which breaded products tend to do)
and ensures every side is crispy.
- Automatic
Scraper System: Essential for nuggets! It continuously removes breadcrumbs
and batter debris that fall to the bottom, preventing them from
carbonizing and spoiling the oil.
- Hydraulic/Screw
Lifting: The entire belt and hood assembly can be lifted automatically.
This is a major advantage in Ahmedabad’s factories for daily deep-cleaning
(CIP - Clean In Place).
- Adjustable
Dwell Time: Variable frequency drives (VFD) allow you to change the belt
speed, adjusting the frying time from 60 seconds (flash fry) to 5 minutes
(full cook).

3. Why Indirect Heating is Better for Nuggets
For coated products, Inbuilt Thermal Heating (Indirect) is far superior
to direct flames:
- No Hot
Spots: Indirect heating prevents the breading on the nuggets from
"spot-burning."
- Oil
Longevity: Reduces oxidation, meaning you can use the same oil for more
days before it becomes dark or acidic.
- Consistent Color: Every nugget comes out with the exact same golden-brown shade.
