2. Key Components
of the "Mini" System
- Inbuilt Heat Exchanger: Unlike large lines
that have a separate boiler, mini systems often have a "tubular"
heat exchanger built under the frying tank. This saves space and reduces
heat loss.
- Bucket-Type Oil Filter: A continuous mesh
filter that removes "fines" (small pieces of dough) from the oil
while it circulates.2 This keeps the oil quality high and
prevents the namkeen from tasting burnt.
- Take-out Belt: An inclined conveyor at the
end that lifts the fried namkeen out of the oil and allows excess oil to
drip back into the tank.
- Variable Frequency Drive (VFD): Essential
for adjusting the frying time. For example, Thin Sev needs only 30
seconds, while Thick Gathiya may need 90 seconds.
