2. Key "Banana-Specific" Technical Features
- Integrated
Slicing System: Most automatic banana fryers have a slicer mounted
directly above the oil. This is crucial because banana slices are sticky;
dropping them straight into hot oil "shocks" the surface,
preventing them from clumping together.
- Automatic
Agitator/Stirrer: Since banana slices tend to overlap and stick, an
automatic stirring arm or "paddle wheel" gently separates the
chips during the first 30 seconds of frying.
- Dual-Belt
Submersion: In continuous lines, a top "hold-down" belt keeps
the buoyant chips submerged, ensuring the edges don't curl excessively and
the color remains uniform.
- Advanced
Oil Filtration: Bananas release starch and sugars that can quickly blacken
oil. These machines feature continuous scrapers and vacuum paper filters
to remove sediments instantly.
3. The Fully Automatic Production Line
A complete "Plug-and-Play" banana chips includes:
- Peeling
Machine: Mechanical peelers that handle green/unripe bananas.
- Continuous
Slicer: Cuts round, oval, or "patta" (long) shapes.
- The
Fryer: Usually Thermic Fluid Heated for 24/7 temperature stability.
- Vibratory
De-Oiler: Shakes off surface oil using high-frequency vibration.
- Cooling
Conveyor: Reduces temperature to ambient for immediate seasoning.
- Flavoring
Drum: An automatic coating pan for salt, pepper, or chili.
